Vegetables: Those Boost the Immunity

Vegetables are essential components of healthy diet satisfying both sensory and nutritional needs. The World Health Organization (WHO) recommends an intake of five to eight portions (400–600 g) daily of fruits and vegetables to reduce risk of chronic diseases. Vegetables contain nutrients such as dietary fiber, vitamins, minerals and phytochemicals viz., phenolics, flavonoids, alkaloids, glycosides attributing to their bioactive properties. Further, vegetables exhibit prophylactic role against several diseases and exhibit immune boosting properties. India is a rich repository of vegetables which lack comprehensive documentation in terms of identification, nutrient content and role in disease prevention and immune boosting potential. A comprehensive approach is used to classify the vegetables of India based on review on immune boosting biomarkers along with pharmacological evaluation for immune boosting activity.
