Daucus carota L.

Carrot is a root vegetable belonging to the family Apiaceae. Carrots are rich source of carotenoids (alpha-carotene and beta-carotene) and polyphenols (catechin and chlorogenic acid). These compounds have anti-oxidant and anti-inflammatory properties and enhance the innate immunity by increasing the lytic activity of Natural Killer cells and T- lymphocytes count.
