Amaranthus caudatus L.

It is commonly known as Chauli and belongs to the Amaranthaceae family. Both leaves and tender shoots are consumed as vegetable. Ascorbic acid, Riboflavin, Tocopherol, β-carotene are the bioactive compounds found in it. Hydroalcoholic extract of A. caudatus reduced inflammatory markers in hypercholesterolemic rabbits indicating immunomodulatory activity.
